Pita Pizzas

Ingredients:
whole wheat pitas
canned artichoke hearts
broccoli florets
heirloom tomatoes
1 T. olive oil for each pizza
mozzarella cheese--whole milk kind, the skim milk kind just doesn't cut it
real Parmesan cheese or other shredded cheese
Garlic salt
Dried basil

Directions:

Preheat oven to 375 degrees. 

Place two whole, whole wheat pitas on cookie sheet.  Take a T. of olive oil and smear on pita.  Slice 4 large pieces of mozzarella cheese and place on pita.  Cut up 3-4 artichoke hearts and scatter on pita.  Cut up broccoli florets to where they are more flat and scatter on pita.  Cut up 2-3 small heirloom tomatoes (I get them at Trader Joes) and scatter on pita.  Sprinkle garlic salt and basil all over pita and top with shredded cheese.  Do the same to the 2nd pita.  Cook for 10 minutes or until cheese is melted.
