Pita Pizzas

Ingredients: whole wheat pitas canned artichoke hearts broccoli florets heirloom tomatoes 1 T. olive oil for each pizza mozzarella cheese--whole milk kind, the skim milk kind just doesn't cut it real Parmesan cheese or other shredded cheese Garlic salt Dried basil Directions: Preheat oven to 375 degrees.  Place two whole, whole wheat pitas on cookie sheet.  Take a T. of olive oil and smear on pita.  Slice 4 large pieces of mozzarella cheese and place on pita.  Cut up 3-4 artichoke hearts and scatter on pita.  Cut up broccoli florets to where they are more flat and scatter on pita.  Cut up 2-3 small heirloom tomatoes (I get them at Trader Joes) and scatter on pita.  Sprinkle garlic salt and basil all over pita and top with shredded cheese.  Do the same to the 2nd pita.  Cook for 10 minutes or until cheese is melted.

Blueberry Streusel Muffins

I got this recipe from The Vegan Homemaker @ veggout.blogspot.com.  I tweaked it a little because of my own allergies. Ingredients: 1 1/2 c. whole wheat pastry flour 2 t. baking powder 1/2 t. baking soda 2/3 c. non-dairy milk (I use Vanilla Rice Dream) 1 t. vanilla extract 1/3 c. pineapple juice (the original recipe calls for orange juice) 1/2 c. sugar or stevia...I used regular old sugar for this 1 c. fresh blueberries Ingredients for streusal topping: 2 T. brown sugar 1 T. sugar 2 T. whole wheat flour 2 T. vegan margarine 3 T. oats 1 t. cinnamon Directions: Preheat oven to 400 degrees.  Line a muffin tin with paper or spray with butter spray with flour.  Place dry ingredient in a large bowl.  Mix well and set aside. In a measuring cup or small bowl, combine milk, pineapple juice and vanilla.  Add wet ingredients to dry.  Stir until just combined.  Do not overmix.  Gently fold in blueberries. It's been awhile

it's been a long time since I posted. Life has been very busy. To start with I made the decision to go back and finish my master's degree in teacher. This master's has been in progress in one way or another since 2006. Between being moved to a different position only a few months after I began teacher, and having my dad get cancer, I had to put it on hold. Originally I was going to complete the project, but once I was moved again I decided it made more sense to take the comps. I'm happy with that decision. I've already passed two of them and am awaiting the results of the last one. Hopefully I will hear something by Friday. I also decided to get the certificate in autism spectrum disorders (ASD). At this time RSP (Resource Specialists), do not need to have the certificate, but I'm sure that will change soon. I want to be ready in case that happens. Plus there is so much new information coming out daily about ASD. I want to understand it b
